Instructions

  • Preheat the oven to 375 degrees F. Grease a 9x13 inch baking dish.
  • In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the sliced sausage and cook until browned. Remove the sausage from the skillet and set aside.
  • In the same skillet, add the remaining 1 tablespoon of olive oil. Add the chopped onion, sliced bell peppers, and minced garlic. Cook until the vegetables are softened, about 5 minutes.
  • In a large bowl, combine the cooked sausage, potatoes, paprika, dried thyme, salt, and black pepper. Mix well to coat the ingredients with the seasonings.
