Ingredients
- 1 pound of sausage, sliced
- 4 cups of potatoes, peeled and diced
- 1 onion, chopped
- 2 bell peppers, sliced
- 2 cloves of garlic, minced
- 1 teaspoon of paprika
- 1/2 teaspoon of dried thyme
- 1/2 teaspoon of salt
- 1/4 teaspoon of black pepper
- 1 cup of shredded cheddar cheese
- 2 tablespoons of olive oil
Instructions
- Preheat the oven to 375 degrees F. Grease a 9x13 inch baking dish.
- In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the sliced sausage and cook until browned. Remove the sausage from the skillet and set aside.
- In the same skillet, add the remaining 1 tablespoon of olive oil. Add the chopped onion, sliced bell peppers, and minced garlic. Cook until the vegetables are softened, about 5 minutes.
- In a large bowl, combine the cooked sausage, potatoes, paprika, dried thyme, salt, and black pepper. Mix well to coat the ingredients with the seasonings.
- Transfer the sausage and potato mixture to the prepared baking dish. Spread it out evenly.
- Top the casserole with the cooked bell peppers and onions mixture.
- Cover the baking dish with foil and bake for 30 minutes.
- Remove the foil, sprinkle the shredded cheddar cheese over the casserole, and bake for an additional 10 minutes, or until the cheese is melted and bubbly.
