Ingredients
- 1 pound spicy sausage, sliced
- 4 large potatoes, peeled and thinly sliced
- 1 onion, thinly sliced
- 2 cloves garlic, minced
- 1 cup shredded cheddar cheese
- 1 cup chicken broth
- 1/2 cup heavy cream
- 2 tablespoons olive oil
- 1 teaspoon paprika
- 1/2 teaspoon cayenne pepper
- Salt and pepper to taste
Instructions
- Preheat the oven to 375°F (190°C). Grease a 9x13 inch baking dish.
- In a large skillet, heat the olive oil over medium heat. Add the sliced sausage and cook until browned, about 5 minutes. Remove the sausage from the skillet and set aside.
- In the same skillet, add the sliced potatoes and onion. Cook for 5 minutes, stirring occasionally, until the potatoes are slightly tender. Add the minced garlic, paprika, and cayenne pepper. Cook for an additional 2 minutes.
- Spread half of the potato mixture in the prepared baking dish. Top with half of the cooked sausage and half of the shredded cheddar cheese. Repeat with the remaining potato mixture, sausage, and cheese.
- In a small bowl, mix the chicken broth and heavy cream. Pour the mixture over the casserole. Season with salt and pepper.
- Cover the baking dish with foil and bake for 45 minutes. Remove the foil and bake for an additional 15 minutes, or until the potatoes are tender and the top is golden brown.
- Allow the casserole to cool for 5 minutes before serving. Enjoy!
