- 1 lb of cooked salmon, flaked

- 1 cup of panko breadcrumbs
- 2 eggs, beaten
- 2 tablespoons of olive oil
Instructions
- In a large bowl, combine 1 lb of cooked salmon, 1/2 cup of breadcrumbs, 1/4 cup of mayonnaise, 2 tablespoons of Dijon mustard, 1/4 cup of chopped fresh parsley, 1/4 cup of finely chopped onion, 1/2 teaspoon of garlic powder, 1/2 teaspoon of salt, and 1/4 teaspoon of black pepper.
- Form the mixture into 4 equal-sized patties and place them on a plate.
- Place 1 cup of panko breadcrumbs on a separate plate.
- Dip each salmon patty into the beaten eggs, then coat with the panko breadcrumbs, pressing gently to adhere.
- Heat 2 tablespoons of olive oil in a large skillet over medium heat.
