Instructions

  • Preheat a grill or grill pan over medium-high heat.
  • Brush the salmon fillets with 1 tablespoon of olive oil and season with salt and pepper.
  • Grill the salmon for 4-5 minutes per side, or until cooked through. Remove from heat and let it rest for a few minutes.
  • In a small bowl, mix together the Greek yogurt, lime juice, and honey to make the dressing.
  • Lay out the tortillas and divide the sliced avocado, diced red onion, and chopped cilantro between the two tortillas.
  • Place a grilled salmon fillet on each tortilla and drizzle with the Greek yogurt dressing.
  • Fold in the sides of the tortillas and then roll them up tightly, securing with toothpicks if needed.
