Ingredients
- 2 cups rye flour
- 1 cup all-purpose flour
- 1 packet (2 1/4 tsp) active dry yeast
- 1 1/4 cups warm water
- 2 tbsp honey
- 1 tsp salt
- 1 tbsp olive oil
- 2 tbsp honey (for glaze)
Instructions
- In a large bowl, combine the rye flour, all-purpose flour, and salt.
- In a separate bowl, dissolve the yeast in the warm water and 2 tbsp of honey. Let it sit for 5 minutes until it becomes frothy.
- Pour the yeast mixture into the flour mixture and stir until a dough forms.
- Transfer the dough to a floured surface and knead for 8-10 minutes, adding more flour if necessary, until the dough is smooth and elastic.
- Place the dough in a greased bowl, cover with a clean kitchen towel, and let it rise in a warm place for 1 hour, or until doubled in size.
- Preheat the oven to 375°F (190°C).
- Punch down the dough and shape it into a loaf. Place it on a greased baking sheet, cover, and let it rise for another 30 minutes.
- Bake the bread for 30-35 minutes, or until it sounds hollow when tapped on the bottom.
- While the bread is still warm, brush the top with 2 tbsp of honey for a sweet glaze.
- Allow the bread to cool before slicing and serving. Enjoy!

To create the best version of this dish, it's essential to use high-quality rye flour and pure, flavorful honey. The glaze should be applied generously to the bread before baking, allowing it to caramelize and impart a beautiful golden hue. Some alternative methods for making this dish include incorporating spices like caraway seeds or adding a touch of citrus zest to the honey glaze for a modern twist. For those seeking the ultimate rye bread with a honey glaze experience, exploring artisanal bakeries and specialty food markets is highly recommended.
