Ingredients
- 1 whole chicken (4-5 pounds)
- 2 tablespoons olive oil
- 2 teaspoons salt
- 1 teaspoon black pepper
- 1 teaspoon paprika
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
Instructions
- Preheat the oven to 375 degrees F.
- Remove the giblets from the chicken and pat dry with paper towels.
- In a small bowl, mix together 2 tablespoons of olive oil, 2 teaspoons of salt, 1 teaspoon of black pepper, 1 teaspoon of paprika, 1 teaspoon of garlic powder, 1 teaspoon of onion powder, 1 teaspoon of dried thyme, and 1 teaspoon of dried rosemary to create a seasoning rub.
- Rub the seasoning mixture all over the chicken, including inside the cavity.
- Truss the chicken with kitchen twine and place it on a roasting rack in a roasting pan.
- Roast the chicken in the preheated oven for 1 hour and 30 minutes, or until the internal temperature reaches 165 degrees F.
- Remove the chicken from the oven and let it rest for 10 minutes before carving.
- Serve and enjoy!
