Ingredients
- 8 slices of roast beef
- 4 slices of Swiss cheese
- 4 slices of whole wheat bread
- 1/4 cup of mayonnaise
- 1/4 cup of Dijon mustard
- 1/2 cup of arugula
- 1 tomato, sliced
- 1/4 red onion, thinly sliced
- Salt and pepper to taste
Instructions
- Spread 1 tablespoon of mayonnaise on one side of each slice of bread.
- Spread 1 tablespoon of Dijon mustard on the other side of each slice of bread.
- Layer 2 slices of roast beef on 2 slices of bread.
- Top the roast beef with 2 slices of Swiss cheese.
- Add a few slices of tomato and red onion on top of the cheese.
- Season with salt and pepper to taste.
- Add a handful of arugula on top of the vegetables.
- Place the remaining slices of bread on top to form sandwiches.
- Slice the sandwiches in half and serve.
