Creamy Rice Pudding

Ingredients
- 1/2 cup of white rice
- 4 cups of whole milk
- 1/2 cup of white sugar
- 1/4 teaspoon of salt
- 1 teaspoon of vanilla extract
- 1/2 teaspoon of ground cinnamon
- 1/4 cup of raisins (optional)
Instructions
- In a medium saucepan, bring 4 cups of whole milk to a boil over medium heat.
- Stir in 1/2 cup of white rice, reduce heat to low, and simmer uncovered for 20 minutes, stirring occasionally.
- Add 1/2 cup of white sugar, 1/4 teaspoon of salt, and continue to simmer for an additional 10 minutes, stirring frequently.
- Remove from heat and stir in 1 teaspoon of vanilla extract and 1/2 teaspoon of ground cinnamon.
- If desired, stir in 1/4 cup of raisins at this point.
- Let the rice pudding cool for a few minutes before serving warm, or chill in the refrigerator for at least 2 hours for a cold and creamy texture.
- Sprinkle with additional ground cinnamon before serving, if desired. Enjoy!
