Instructions

  • Preheat the oven to 325°F (165°C).
  • In a medium bowl, mix together 1 1/2 cups of graham cracker crumbs, 1/4 cup of granulated sugar, and 1/2 cup of melted unsalted butter. Press the mixture into the bottom of a 9-inch springform pan. Bake in the preheated oven for 10 minutes, then remove and let cool.
  • In a large bowl, beat 24 oz of softened cream cheese, 1 cup of white sugar, and 1 tsp of vanilla extract until smooth. Beat in 4 large eggs one at a time, mixing well after each addition. Stir in 1/2 cup of sour cream and the melted white chocolate chips until well combined.
  • Gently fold in 1/2 cup of fresh raspberries. Pour the cream cheese mixture over the cooled crust.
  • Bake in the preheated oven for 55-60 minutes, or until the center is set. Allow the cheesecake to cool to room temperature, then refrigerate for at least 4 hours, or overnight, before serving.
  • Before serving, garnish with additional fresh raspberries and melted white chocolate if desired. Enjoy!
