Instructions

  • Preheat the oven to 350°F (175°C). Line a 12-cup muffin tin with paper liners.
  • In a medium bowl, whisk together 1 1/2 cups of flour, 1 1/2 teaspoons of baking powder, and 1/4 teaspoon of salt.
  • In a large bowl, cream 1/2 cup of softened butter with 1 cup of granulated sugar until light and fluffy. Add 2 eggs, one at a time, beating well after each addition. Stir in 1 teaspoon of vanilla extract.
  • Gradually add the flour mixture to the wet ingredients, alternating with 1/2 cup of milk, beginning and ending with the flour mixture. Mix until just combined.
  • Divide the batter evenly into 6 small bowls. Add a different color of gel food coloring to each bowl and stir until the colors are well combined.
  • Spoon a small amount of each colored batter into the prepared muffin cups, layering the colors in the order of the rainbow (red, orange, yellow, green, blue, purple).
  • Place a small chocolate candy in the center of each cupcake, gently pressing it down into the batter.
  • Cover the candies with the remaining batter, filling each cupcake liner about 2/3 full.
  • Bake in the preheated oven for 18-20 minutes, or until a toothpick inserted into the center of a cupcake comes out clean.
  • Allow the cupcakes to cool in the tin for 5 minutes, then transfer them to a wire rack to cool completely before serving. Enjoy the surprise center when biting into the colorful cupcakes!
