Instructions

  • Preheat the oven to 325°F. Grease a 9-inch springform pan.

  • In a large bowl, beat the cream cheese and 1 cup of sugar until smooth. Add the vanilla extract and mix well. Beat in the eggs one at a time, then add the sour cream and heavy cream. Mix until everything is well combined.
  • Divide the cheesecake batter evenly into 6 bowls. Add a different color of gel food coloring to each bowl and mix until the desired color is achieved.
  • Drop spoonfuls of the colored batter onto the crust in the prepared pan, alternating colors to create a rainbow swirl effect.
  • Use a knife to gently swirl the colors together for a marbled effect.
  • Place the pan on a baking sheet and bake in the preheated oven for 1 hour, or until the edges are set and the center is slightly jiggly.
