Created by: Howcan Team
Ingredients
- 3 cups all-purpose flour
- 2 cups granulated sugar
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1 cup unsalted butter, softened
- 4 large eggs
- 1 cup whole milk
- 2 teaspoons vanilla extract
- Assorted gel food coloring (red, orange, yellow, green, blue, purple)
- 4 cups powdered sugar
- 1 cup unsalted butter, softened
- 1 teaspoon vanilla extract
- 3-4 tablespoons heavy cream
Instructions
- Preheat the oven to 350°F. Grease and flour three 8-inch round cake pans.
- In a large bowl, whisk together 3 cups of flour, 2 cups of sugar, 1 tablespoon of baking powder, and 1/2 teaspoon of salt.
- Add 1 cup of softened butter, 4 eggs, 1 cup of milk, and 2 teaspoons of vanilla extract to the dry ingredients. Mix until smooth.
- Divide the batter evenly into 6 bowls. Add a different color of gel food coloring to each bowl and mix until the batter is vibrant.
- Spoon the colored batter into the prepared cake pans, layering the colors in each pan. Use a knife to gently swirl the colors together for a marbled effect.
- Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean. Allow the cakes to cool in the pans for 10 minutes, then transfer to a wire rack to cool completely.
- In a large bowl, beat 1 cup of softened butter until creamy. Gradually add 4 cups of powdered sugar, beating well after each addition. Stir in 1 teaspoon of vanilla extract and 3-4 tablespoons of heavy cream, mixing until smooth and creamy.
- Once the cakes are completely cool, place one layer on a serving plate and spread a layer of frosting on top. Repeat with the remaining layers, then frost the top and sides of the cake with the remaining frosting.
- Slice and serve the rainbow swirl cake with extra frosting. Enjoy!
