  • 6 packages (3 ounces each) of assorted flavored gelatin

  • 1 cup of sugar
  • 2 cups of cold water
  • 2 cups of assorted fruits (such as strawberries, blueberries, kiwi, and mandarin oranges), chopped

Instructions

  • In a large bowl, dissolve each package of flavored gelatin in 1 cup of boiling water. Stir well until completely dissolved. Repeat for each flavor. Pour each flavor into separate shallow containers and refrigerate for 1 hour or until set.
  • In a saucepan, heat the coconut milk and sugar over medium heat, stirring constantly until the sugar is dissolved. Remove from heat and stir in 2 cups of cold water. Allow the coconut milk mixture to cool to room temperature.
  • Once the flavored gelatin is set, cut them into small cubes and gently mix them with the assorted fruits in a 9x13 inch dish.
  • Pour the cooled coconut milk mixture over the gelatin and fruit mixture. Refrigerate for at least 2 hours or until set.
  • Slice and serve the coconut milk rainbow jello salad chilled. Enjoy!
