Instructions

  • In a large mixing bowl, combine 1 cup of cooked quinoa, 1/2 cup of mashed black beans, 1/2 cup of grated carrots, 1/2 cup of finely chopped bell peppers, 1/4 cup of finely chopped red onion, and 2 cloves of minced garlic.
  • Add 1/4 cup of bread crumbs, 1 teaspoon of cumin, 1 teaspoon of paprika, 1/2 teaspoon of salt, and 1/4 teaspoon of black pepper to the bowl. Mix well to combine all ingredients.
  • Form the quinoa mixture into 4 equal-sized patties.
  • In a large skillet, heat 1/4 cup of olive oil over medium heat. Add the quinoa patties to the skillet and cook for 4-5 minutes on each side, or until golden brown and crispy.
  • Once cooked, remove the quinoa veggie burgers from the skillet and place them on a paper towel-lined plate to drain any excess oil.
