Instructions

  • Rinse the quinoa under cold water using a fine-mesh strainer.
  • In a medium saucepan, combine the rinsed quinoa and 2 cups of water. Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes, or until all the water is absorbed. Remove from heat and let it sit, covered, for 5 minutes.
  • Fluff the quinoa with a fork and divide it into two bowls.
  • Top each bowl of quinoa with sliced banana, berries, and chopped nuts.
  • Drizzle 1 tablespoon of honey or maple syrup over each bowl.
  • Sprinkle with cinnamon and a pinch of salt.
