Ingredients
- 1 cup quinoa
- 2 cups water
- 1 banana, sliced
- 1/2 cup berries (strawberries, blueberries, raspberries)
- 1/4 cup chopped nuts (almonds, walnuts, pecans)
- 2 tablespoons honey or maple syrup
- 1/2 teaspoon cinnamon
- 1/4 teaspoon salt
Instructions
- Rinse the quinoa under cold water using a fine-mesh strainer.
- In a medium saucepan, combine the rinsed quinoa and 2 cups of water. Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes, or until all the water is absorbed. Remove from heat and let it sit, covered, for 5 minutes.
- Fluff the quinoa with a fork and divide it into two bowls.
- Top each bowl of quinoa with sliced banana, berries, and chopped nuts.
- Drizzle 1 tablespoon of honey or maple syrup over each bowl.
- Sprinkle with cinnamon and a pinch of salt.
