Chorizo Queso Blanco

Ingredients
- 1 lb chorizo sausage
- 1 small onion, diced
- 2 cloves garlic, minced
- 2 tbsp all-purpose flour
- 1 cup whole milk
- 1 cup heavy cream
- 1 lb white American cheese, shredded
- 1 can (4 oz) diced green chilies, drained
- 1/4 cup chopped fresh cilantro
- Salt and pepper to taste
Instructions
- In a large skillet, cook 1 lb of chorizo sausage over medium heat, breaking it up into small pieces with a spoon, until fully cooked. Remove from the skillet and set aside.
- In the same skillet, add the diced onion and minced garlic. Cook until the onion is soft and translucent, about 3-4 minutes.
- Sprinkle 2 tbsp of all-purpose flour over the onion and garlic, stirring constantly for 1-2 minutes to make a roux.
- Slowly pour in 1 cup of whole milk and 1 cup of heavy cream, stirring constantly until the mixture thickens, about 3-4 minutes.
- Reduce the heat to low and gradually add the shredded white American cheese, stirring until melted and smooth.
- Stir in the cooked chorizo, diced green chilies, and chopped cilantro. Season with salt and pepper to taste.
- Transfer the queso blanco to a serving bowl and serve immediately with tortilla chips or vegetables for dipping.
