Ingredients

  • 2 cans of young green jackfruit in brine, drained and rinsed
  • 1 tablespoon of olive oil
  • 1 small onion, diced
  • 3 cloves of garlic, minced
  • 1 teaspoon of smoked paprika
  • 1/2 teaspoon of cumin
  • 1/2 teaspoon of chili powder
  • 1 cup of vegetable broth
  • 1/2 cup of barbecue sauce
  • 4 hamburger buns
  • For the coleslaw topping:
  • 2 cups of shredded cabbage
  • 1 carrot, grated
  • 1/4 cup of vegan mayonnaise
  • 1 tablespoon of apple cider vinegar
  • 1 tablespoon of maple syrup
  • Salt and pepper to taste

Instructions

  • In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the diced onion and minced garlic, and sauté until softened, about 3 minutes.
  • Add the drained and rinsed jackfruit to the skillet, along with the smoked paprika, cumin, and chili powder. Use a fork to break up the jackfruit into smaller pieces, resembling pulled pork.
  • Pour in the vegetable broth and bring to a simmer. Cook for 15-20 minutes, or until the jackfruit is tender and most of the liquid has evaporated.
  • Stir in the barbecue sauce and cook for an additional 5 minutes, allowing the flavors to meld. Remove from heat and set aside.
  • In a large bowl, combine the shredded cabbage, grated carrot, vegan mayonnaise, apple cider vinegar, and maple syrup. Season with salt and pepper to taste, and mix well to combine.
  • To assemble the sandwiches, divide the pulled jackfruit mixture evenly among the hamburger buns. Top with a generous portion of the coleslaw mixture.
  • Serve the pulled jackfruit sandwiches with coleslaw topping immediately, and enjoy!
