Ingredients
- 2 cans of young green jackfruit in brine, drained and rinsed
- 1 tablespoon olive oil
- 1/2 onion, diced
- 2 cloves garlic, minced
- 1 cup BBQ sauce
- 1/2 cup vegetable broth
- 1 teaspoon smoked paprika
- 1/2 teaspoon cumin
- 1/2 teaspoon chili powder
- Salt and pepper to taste
- 4 hamburger buns
Instructions
- Heat the olive oil in a large skillet over medium heat. Add the diced onion and minced garlic, and sauté until softened, about 3-4 minutes.
- Add the drained and rinsed jackfruit to the skillet, and use a fork to break it apart into shreds.
- Stir in the BBQ sauce, vegetable broth, smoked paprika, cumin, chili powder, salt, and pepper. Bring the mixture to a simmer, then reduce the heat to low and let it cook for 20-25 minutes, stirring occasionally, until the jackfruit is tender and the flavors are well combined.
- While the jackfruit is cooking, lightly toast the hamburger buns in a toaster or on a skillet.
- Once the jackfruit is ready, divide the mixture evenly among the toasted buns to make sandwiches.
