Instructions

  • Heat the olive oil in a large skillet over medium heat. Add the diced onion and minced garlic, and sauté until the onion is translucent.
  • Add the drained and rinsed jackfruit to the skillet, and use a fork to break it apart into shreds.
  • Stir in the BBQ sauce, vegetable broth, brown sugar, smoked paprika, cumin, chili powder, salt, and pepper. Mix well to combine all the ingredients.
  • Reduce the heat to low, cover the skillet, and let the jackfruit simmer for 20-25 minutes, stirring occasionally, until it has absorbed the flavors and has a pulled pork-like texture.
  • Once the jackfruit is tender and has absorbed the flavors, use a fork to further shred the jackfruit in the skillet, ensuring it resembles pulled pork.
  • Remove the skillet from the heat and let the pulled BBQ jackfruit cool for a few minutes before serving.
