Instructions

  • Preheat the oven to 375 degrees F.
  • In a bowl, mix together the chopped spinach, crumbled feta cheese, garlic powder, and dried oregano.
  • Lay the chicken breasts flat on a cutting board. Use a sharp knife to cut a pocket into the side of each chicken breast, being careful not to cut all the way through.
  • Stuff each chicken breast with the spinach and feta mixture, then season the outside of the chicken with salt and pepper.
  • Wrap each stuffed chicken breast with 2 slices of prosciutto, making sure to cover the entire breast.
  • In a large skillet, heat the olive oil over medium-high heat. Add the prosciutto-wrapped chicken breasts and cook for 3-4 minutes on each side, until the prosciutto is crispy and the chicken is golden brown.
  • Transfer the chicken breasts to a baking dish and bake in the preheated oven for 15-20 minutes, or until the chicken is cooked through and reaches an internal temperature of 165 degrees F.
  • Remove from the oven and let the chicken rest for 5 minutes before serving. Enjoy!
