Instructions

  • Preheat a skillet over medium heat and add 1 tbsp of olive oil.
  • Remove the chorizo from its casing and cook in the skillet, breaking it up with a spoon, for about 5-7 minutes until fully cooked.
  • While the chorizo is cooking, preheat the oven to 350 degrees F to warm the pretzel buns.
  • Slice the pretzel buns in half and place them in the oven for 5 minutes to warm.
  • Once the chorizo is cooked, remove it from the skillet and set aside.
  • In the same skillet, toast the inside of the pretzel buns for 1-2 minutes until golden brown.
  • In a small bowl, mix the mayonnaise and Dijon mustard together.
  • Spread the mayonnaise and mustard mixture on the inside of the pretzel buns.
  • Divide the cooked chorizo evenly between the bottom halves of the pretzel buns.
  • Top the chorizo with shredded cheddar cheese, diced red onion, and sliced pickled jalapenos.
  • Place the top halves of the pretzel buns on the sandwiches.
  • Serve the sandwiches immediately and enjoy!
