Creamy Potato Soup

Ingredients
- 6 large potatoes, peeled and diced
- 1 onion, chopped
- 3 cloves of garlic, minced
- 6 cups of chicken or vegetable broth
- 1 cup of heavy cream
- 1/4 cup of butter
- 1/4 cup of all-purpose flour
- 1 teaspoon of dried thyme
- Salt and pepper to taste
- Optional toppings: shredded cheddar cheese, crispy bacon, chopped green onions
Instructions
- In a large pot, melt 1/4 cup of butter over medium heat.
- Add the chopped onion and minced garlic, and sauté until the onion is translucent.
- Sprinkle in 1/4 cup of all-purpose flour, stirring constantly to make a roux.
- Slowly pour in 6 cups of chicken or vegetable broth, stirring to combine and prevent lumps.
- Add the diced potatoes and dried thyme to the pot, and bring the mixture to a boil.
- Reduce the heat to low, cover the pot, and simmer for 20 minutes or until the potatoes are tender.
- Using an immersion blender, blend the soup until smooth and creamy. Alternatively, transfer the soup in batches to a blender and blend until smooth, then return to the pot.
- Stir in 1 cup of heavy cream and season with salt and pepper to taste.
- Simmer the soup for an additional 5 minutes to heat through.
- Serve the creamy potato soup hot, topped with shredded cheddar cheese, crispy bacon, and chopped green onions if desired.
