Instructions

  • In a large pot, melt 1/4 cup of butter over medium heat.
  • Add the chopped onion and minced garlic, and sauté until the onion is translucent.
  • Sprinkle in 1/4 cup of all-purpose flour, stirring constantly to make a roux.
  • Slowly pour in 6 cups of chicken or vegetable broth, stirring to combine and prevent lumps.
  • Add the diced potatoes and dried thyme to the pot, and bring the mixture to a boil.
  • Reduce the heat to low, cover the pot, and simmer for 20 minutes or until the potatoes are tender.
  • Using an immersion blender, blend the soup until smooth and creamy. Alternatively, transfer the soup in batches to a blender and blend until smooth, then return to the pot.
  • Stir in 1 cup of heavy cream and season with salt and pepper to taste.
  • Simmer the soup for an additional 5 minutes to heat through.
