Ingredients
- 2 large potatoes, peeled and grated
- 1 small onion, grated
- 2 eggs
- 1/4 cup all-purpose flour
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 cup vegetable oil
- 4 tablespoons caviar
Instructions
- In a large bowl, combine the grated potatoes, grated onion, eggs, flour, salt, and black pepper.
- Heat the vegetable oil in a large skillet over medium heat.
- Scoop about 1/4 cup of the potato mixture into the skillet, flattening it with a spatula to form a pancake. Repeat to make 4 pancakes, cooking in batches if necessary.
- Cook the pancakes for 3-4 minutes on each side, or until golden brown and crispy. Transfer to a paper towel-lined plate to drain excess oil.
- Top each pancake with a dollop of caviar before serving.
- Serve the potato pancakes with caviar immediately and enjoy!
