Instructions

  • In a large bowl, combine the grated potatoes, grated onion, eggs, flour, salt, and black pepper.
  • Heat the vegetable oil in a large skillet over medium heat.
  • Scoop about 1/4 cup of the potato mixture into the skillet, flattening it with a spatula to form a pancake. Repeat to make 4 pancakes, cooking in batches if necessary.
  • Cook the pancakes for 3-4 minutes on each side, or until golden brown and crispy. Transfer to a paper towel-lined plate to drain excess oil.
  • Top each pancake with a dollop of caviar before serving.
  • Serve the potato pancakes with caviar immediately and enjoy!
