  • 8 oz cream cheese, softened
  • 1/4 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1 cup diced pineapple
  • 1 cup diced mango
  • 1/4 cup apricot preserves

Instructions

  • Preheat the oven to 375°F (190°C).
  • In a food processor, combine 1 1/2 cups of flour, 1/2 cup of powdered sugar, and 1/4 teaspoon of salt. Pulse to mix.
  • Add the cold, cubed butter and pulse until the mixture resembles coarse crumbs.
  • Add the heavy cream and pulse until the dough comes together.
  • Press the dough into a 9-inch tart pan with a removable bottom, making sure to evenly cover the bottom and sides. Prick the bottom with a fork.
  • Bake the crust for 15-18 minutes, or until golden brown. Allow to cool completely.
  • In a mixing bowl, beat the softened cream cheese, 1/4 cup of granulated sugar, and 1 teaspoon of vanilla extract until smooth and creamy.
  • Spread the cream cheese mixture evenly over the cooled tart crust.
  • In a small saucepan, heat the apricot preserves over low heat until melted. Remove from heat and let cool slightly.
  • Arrange the diced pineapple and mango over the cream cheese layer in a decorative pattern.
  • Brush the melted apricot preserves over the fruit to glaze.
  • Refrigerate the tart for at least 1 hour before serving to allow the filling to set.
  • Slice and serve the pineapple mango tart, and enjoy!
