  • In a large skillet, heat 2 tbsp of olive oil over medium heat. Add 1/2 cup of chopped onion and cook until softened, about 5 minutes.
  • Add 2 cloves of minced garlic to the skillet and cook for another 1-2 minutes until fragrant.
  • Carefully pour in 1/2 cup of vodka and let it simmer for 3-4 minutes to cook off the alcohol.
  • Stir in 1 can of crushed tomatoes and let the sauce simmer for 10 minutes, stirring occasionally.
  • Reduce the heat to low and pour in 1 cup of heavy cream. Stir to combine and let the sauce simmer for an additional 5 minutes.
  • Add 1/2 cup of grated Parmesan cheese to the sauce and stir until melted and well combined.
  • Season the sauce with salt and pepper to taste.
