Ingredients
- 1 cup creamy peanut butter
- 1/4 cup unsalted butter, softened
- 2 cups powdered sugar
- 1 teaspoon vanilla extract
- 1/4 teaspoon salt
- 12 ounces semisweet chocolate, chopped
- 2 tablespoons vegetable shortening
Instructions
- In a large mixing bowl, combine 1 cup of creamy peanut butter, 1/4 cup of softened unsalted butter, 2 cups of powdered sugar, 1 teaspoon of vanilla extract, and 1/4 teaspoon of salt. Mix until well combined.
- Shape the peanut butter mixture into 1-inch balls and place them on a baking sheet lined with parchment paper. Place the baking sheet in the refrigerator and chill for 15 minutes.
- In a microwave-safe bowl, combine 12 ounces of chopped semisweet chocolate and 2 tablespoons of vegetable shortening. Microwave in 30-second intervals, stirring in between, until the chocolate is melted and smooth.
- Using a fork, dip each chilled peanut butter ball into the melted chocolate, allowing any excess chocolate to drip off. Place the coated truffles back on the parchment-lined baking sheet.
