Instructions

  • Grease an 8x8 inch pan with butter or line it with parchment paper.
  • In a saucepan, combine 2 cups of granulated sugar and 1/2 cup of milk over medium heat. Stir constantly until the mixture comes to a boil.
  • Once boiling, continue to stir and let it boil for 2-3 minutes, or until it reaches the soft ball stage (235-240°F on a candy thermometer).
  • Remove the saucepan from the heat and immediately stir in 1 cup of creamy peanut butter, 1 teaspoon of vanilla extract, and 1/4 cup of unsalted butter until smooth and well combined.
  • Pour the mixture into the prepared pan and smooth the top with a spatula.
  • Let the fudge cool at room temperature for about 2 hours, or until set.
  • Once set, cut the fudge into 24 pieces and enjoy!
