Instructions

  • Preheat the oven to 375°F (190°C).
  • On a lightly floured surface, roll out the puff pastry into a 10x14 inch rectangle. Transfer to a parchment-lined baking sheet.
  • In a bowl, toss the peach slices with lemon juice, granulated sugar, and ground cinnamon. Arrange the peach slices on top of the puff pastry, leaving a 1-inch border.
  • Fold the edges of the puff pastry over the peaches, creating a rustic tart shape. Brush the edges with the beaten egg.
  • Bake for 30-35 minutes, or until the pastry is golden brown and the peaches are tender.
  • While the tart is baking, heat the honey in a small saucepan over low heat until it becomes thin and runny.
