  • 1 tablespoon lemon juice
  • 1 tablespoon cornstarch
  • 1 pint vanilla ice cream

Instructions

  • Preheat the oven to 375°F (190°C).
  • In a food processor, combine 1 1/2 cups of flour, 1/2 cup of granulated sugar, and 1/4 teaspoon of salt. Add the cold butter pieces and pulse until the mixture resembles coarse crumbs.
  • While pulsing, gradually add the ice water until the dough comes together.
  • Turn the dough out onto a lightly floured surface and form it into a disk. Wrap in plastic wrap and refrigerate for 30 minutes.
  • In a large bowl, toss the sliced peaches with 1/4 cup of brown sugar, 1 teaspoon of cinnamon, 1/4 teaspoon of nutmeg, 1 tablespoon of lemon juice, and 1 tablespoon of cornstarch until well combined.
  • Roll out the chilled dough on a floured surface to fit a 9-inch tart pan. Carefully transfer the dough to the tart pan and trim any excess dough from the edges.
  • Arrange the peach mixture over the dough in the tart pan.
  • Bake for 35-40 minutes, or until the crust is golden and the peaches are tender.
  • Allow the tart to cool for 10 minutes before serving.
  • Serve each slice of peach tart with a dollop of vanilla ice cream on top.
