Ingredients
- 1 1/2 cups all-purpose flour
- 1/2 cup granulated sugar
- 1/4 teaspoon salt
- 1/2 cup unsalted butter, cold and cut into small pieces
- 1/4 cup ice water
- 6 ripe peaches, peeled, pitted, and sliced
- 1/4 cup brown sugar
- 1 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- 1 tablespoon lemon juice
- 1 tablespoon cornstarch
- 1 pint vanilla ice cream
Instructions
- Preheat the oven to 375°F (190°C).
- In a food processor, combine 1 1/2 cups of flour, 1/2 cup of granulated sugar, and 1/4 teaspoon of salt. Add the cold butter pieces and pulse until the mixture resembles coarse crumbs.
- While pulsing, gradually add the ice water until the dough comes together.
- Turn the dough out onto a lightly floured surface and form it into a disk. Wrap in plastic wrap and refrigerate for 30 minutes.
- In a large bowl, toss the sliced peaches with 1/4 cup of brown sugar, 1 teaspoon of cinnamon, 1/4 teaspoon of nutmeg, 1 tablespoon of lemon juice, and 1 tablespoon of cornstarch until well combined.
- Roll out the chilled dough on a floured surface to fit a 9-inch tart pan. Carefully transfer the dough to the tart pan and trim any excess dough from the edges.
- Arrange the peach mixture over the dough in the tart pan.
- Bake for 35-40 minutes, or until the crust is golden and the peaches are tender.
- Allow the tart to cool for 10 minutes before serving.
- Serve each slice of peach tart with a dollop of vanilla ice cream on top.
