Instructions
- In a large bowl, whisk together 1 1/2 cups of flour, 3 1/2 teaspoons of baking powder, 1 teaspoon of salt, and 1 tablespoon of white sugar.
- In a separate bowl, mix 1 1/4 cups of milk, 1 egg, 3 tablespoons of melted butter, and 1 teaspoon of vanilla extract.
- Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix; lumps are okay.
- In another bowl, combine the chopped peach slices, 1/2 cup of brown sugar, 1/2 teaspoon of ground cinnamon, and 1/4 teaspoon of ground nutmeg.
- Heat a lightly oiled griddle or frying pan over medium-high heat.
- Pour or scoop the batter onto the griddle, using approximately 1/4 cup for each pancake.
- Cook until bubbles form on the surface, then flip and cook until browned on the other side.
- In a small bowl, mix 1/4 cup of melted butter with the peach cobbler mixture.
