Instructions

  • In a large bowl, whisk together 2 cups of all-purpose flour, 2 tablespoons of granulated sugar, 1 tablespoon of baking powder, and 1/2 teaspoon of salt.
  • In a separate bowl, beat 2 large eggs and then stir in 1 3/4 cups of milk, 1/4 cup of melted unsalted butter, and 1 teaspoon of vanilla extract.
  • Pour the wet ingredients into the dry ingredients and stir until just combined. It's okay if the batter is a little lumpy.
  • Heat a lightly oiled griddle or frying pan over medium-high heat. Pour or scoop the batter onto the griddle, using approximately 1/4 cup for each pancake.
  • Cook until bubbles form on the surface, then flip and cook until golden brown on the other side.
