Pan-Seared Halibut with Herb Butter and Roasted Vegetables
Created by: Howcan Team
Ingredients
- 4 halibut fillets (6 ounces each)
- Salt and pepper to taste
- 2 tablespoons olive oil
- 1/2 cup unsalted butter, softened
- 2 tablespoons chopped fresh herbs (such as parsley, chives, and dill)
- 1 pound mixed vegetables (such as bell peppers, zucchini, and cherry tomatoes)
- 2 tablespoons balsamic vinegar
- 1 teaspoon garlic powder
- 1 teaspoon dried thyme
- 1/2 teaspoon paprika
- 1/4 teaspoon red pepper flakes
- 1 tablespoon olive oil
Instructions
- Preheat the oven to 400°F (200°C).
- Season the halibut fillets with salt and pepper on both sides.
- In a small bowl, mix the softened butter with the chopped fresh herbs. Set aside.
- In a large bowl, toss the mixed vegetables with balsamic vinegar, garlic powder, dried thyme, paprika, red pepper flakes, and olive oil until evenly coated. Spread the vegetables in a single layer on a baking sheet.
- Roast the vegetables in the preheated oven for 20-25 minutes, or until they are tender and slightly caramelized, stirring once halfway through cooking.
- While the vegetables are roasting, heat 2 tablespoons of olive oil in a large skillet over medium-high heat.
- Add the seasoned halibut fillets to the skillet and cook for 3-4 minutes on each side, or until golden brown and cooked through.
- Once the halibut is cooked, remove it from the skillet and place it on a serving platter. Top each fillet with a generous dollop of the herb butter.
- Serve the pan-seared halibut with the roasted vegetables on the side. Enjoy!
The history of Pan-Seared Halibut with Herb Butter dates back to the coastal regions of North America, where halibut is abundant. This dish has been a staple in the culinary traditions of regions like the Pacific Northwest and Alaska, where fresh seafood is celebrated. Renowned chefs like Tom Douglas in Seattle and Eric Ripert in New York have popularized this dish, often serving it with a medley of locally sourced roasted vegetables to complement the delicate flavors of the halibut. The key to this dish lies in the perfect sear on the halibut, paired with a rich herb butter and the earthy sweetness of the roasted vegetables. Today, the best versions of this dish can be found in upscale seafood restaurants along the coast, where chefs prioritize using the freshest halibut and seasonal vegetables. The most important elements to get right in this dish are the quality of the halibut, the freshness of the herbs in the butter, and the precise roasting of the vegetables to bring out their natural flavors. An alternative method for making this dish is to grill the halibut instead of pan-searing it, which adds a delightful smokiness to the dish.
