Ingredients
- 4 halibut fillets (6 ounces each)
- Salt and pepper to taste
- 2 tablespoons olive oil
- 4 tablespoons unsalted butter
- 4 cloves garlic, minced
- 1 tablespoon fresh lemon juice
- 2 tablespoons chopped fresh parsley
- 1 pound mixed vegetables (such as bell peppers, zucchini, and cherry tomatoes)
- 1 tablespoon balsamic vinegar
- 1 teaspoon dried thyme
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/2 teaspoon paprika
- 2 tablespoons olive oil
- Salt and pepper to taste
Instructions
- Preheat the oven to 425°F (220°C).
- Season the halibut fillets with salt and pepper on both sides.
- In a large skillet, heat 2 tablespoons of olive oil over medium-high heat. Add the halibut fillets and cook for 3-4 minutes on each side, until golden brown and cooked through. Remove from the skillet and set aside.
- In the same skillet, melt the butter over medium heat. Add the minced garlic and cook for 1-2 minutes, until fragrant. Stir in the lemon juice and chopped parsley. Remove from heat and set aside.
- In a large bowl, toss the mixed vegetables with balsamic vinegar, dried thyme, garlic powder, onion powder, paprika, 2 tablespoons of olive oil, salt, and pepper. Spread the vegetables in a single layer on a baking sheet.
- Roast the vegetables in the preheated oven for 15-20 minutes, or until tender and slightly caramelized.
- To serve, place the pan-seared halibut fillets on plates and drizzle with the garlic butter sauce. Serve the roasted vegetables on the side.
