Ingredients
- 4 halibut fillets (6 oz each)
- 1/4 cup orange juice
- 2 tablespoons lime juice
- 2 tablespoons honey
- 1 teaspoon soy sauce
- 1/2 teaspoon grated ginger
- 1/4 teaspoon red pepper flakes
- Salt and pepper to taste
- 2 ripe mangoes, diced
- 1/2 red bell pepper, diced
- 1/4 cup red onion, finely chopped
- 2 tablespoons fresh cilantro, chopped
- 1 tablespoon lime juice
- 1 tablespoon olive oil
Instructions
- In a small bowl, whisk together 1/4 cup orange juice, 2 tablespoons lime juice, 2 tablespoons honey, 1 teaspoon soy sauce, 1/2 teaspoon grated ginger, and 1/4 teaspoon red pepper flakes to make the citrus glaze. Set aside.
- In another bowl, combine 2 diced ripe mangoes, 1/2 diced red bell pepper, 1/4 cup finely chopped red onion, 2 tablespoons chopped fresh cilantro, 1 tablespoon lime juice, and 1 tablespoon olive oil to make the mango salsa. Season with salt and pepper to taste. Set aside.
- Season the halibut fillets with salt and pepper.
- Heat a large non-stick skillet over medium-high heat. Add the halibut fillets and cook for 3-4 minutes on each side, or until golden brown and cooked through.
- Pour the citrus glaze over the halibut fillets in the skillet, and cook for an additional 1-2 minutes, spooning the glaze over the fish until it thickens slightly.
- Transfer the pan-seared halibut to serving plates and top each fillet with a generous spoonful of mango salsa.
