Instructions

  • In another bowl, combine 2 diced ripe mangoes, 1/2 diced red bell pepper, 1/4 cup finely chopped red onion, 2 tablespoons chopped fresh cilantro, 1 tablespoon lime juice, and 1 tablespoon olive oil to make the mango salsa. Season with salt and pepper to taste. Set aside.
  • Season the halibut fillets with salt and pepper.
  • Heat a large non-stick skillet over medium-high heat. Add the halibut fillets and cook for 3-4 minutes on each side, or until golden brown and cooked through.
