Instructions

  • Preheat the oven to 400°F (200°C).
  • In a small bowl, mix together the almond paste, granulated sugar, and almond extract until well combined.
  • Unfold the puff pastry sheet on a lightly floured surface. Roll out the pastry into a 12x12 inch square.
  • Spread the almond paste mixture evenly over the puff pastry.
  • Starting from the bottom and top edges, roll the pastry towards the center, leaving a 1/4 inch gap in the middle.
  • Chill the rolled pastry in the refrigerator for 15 minutes to firm up.
  • Preheat the oven to 400°F (200°C).
  • Line a baking sheet with parchment paper.
  • Using a sharp knife, slice the rolled pastry into 1/2 inch slices and place them on the prepared baking sheet, cut side down.
  • Brush the palmiers with the beaten egg.
  • Bake for 12-15 minutes, or until the palmiers are golden brown and crispy.
  • Allow the palmiers to cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
