Ingredients
- 1 sheet of puff pastry
- 1 cup almond paste
- 1/4 cup granulated sugar
- 1/4 teaspoon almond extract
- 1 egg, beaten
Instructions
- Preheat the oven to 400°F (200°C).
- In a small bowl, mix together the almond paste, granulated sugar, and almond extract until well combined.
- Unfold the puff pastry sheet on a lightly floured surface. Roll out the pastry into a 12x12 inch square.
- Spread the almond paste mixture evenly over the puff pastry.
- Starting from the bottom and top edges, roll the pastry towards the center, leaving a 1/4 inch gap in the middle.
- Chill the rolled pastry in the refrigerator for 15 minutes to firm up.
- Preheat the oven to 400°F (200°C).
- Line a baking sheet with parchment paper.
- Using a sharp knife, slice the rolled pastry into 1/2 inch slices and place them on the prepared baking sheet, cut side down.
- Brush the palmiers with the beaten egg.
- Bake for 12-15 minutes, or until the palmiers are golden brown and crispy.
- Allow the palmiers to cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
