French

The history of Palmier with almond filling dates back to 17th century France, where it was created by French pastry chefs. This delectable treat, also known as "elephant ears" due to its shape, consists of flaky puff pastry filled with a sweet almond paste. Renowned French patisseries such as Ladurée and Pierre Hermé have perfected this indulgent delight, making it a staple in French pastry culture. The key to a perfect Palmier with almond filling lies in the quality of the puff pastry and the rich, nutty almond paste. Today, the best versions of this treat can be found in traditional French bakeries and patisseries across France.
