  • 1/4 cup sliced green bell pepper
  • 1/4 cup sliced onion

Instructions

  • In a large non-stick skillet, heat 1 tbsp of vegetable oil over medium-high heat.
  • Add 2 tbsp of red curry paste to the skillet and stir-fry for 1 minute until fragrant.
  • Add 14 oz of cubed tofu to the skillet and stir-fry for 3-4 minutes until lightly browned.
  • Add 1 cup of green beans, 1/4 cup of sliced red bell pepper, 1/4 cup of sliced green bell pepper, and 1/4 cup of sliced onion to the skillet. Stir-fry for an additional 2-3 minutes.
  • Pour in 1/2 cup of coconut milk, 1 tbsp of soy sauce, and 1 tbsp of brown sugar. Stir well to combine and simmer for 2-3 minutes until the sauce thickens slightly.
  • Toss in 1/4 cup of fresh basil leaves and stir to combine. Remove from heat.
  • Serve the tofu pad prik king hot with steamed rice and enjoy!
