Ingredients
- 2 tablespoons vegetable oil
- 4 cloves garlic, minced
- 2 shallots, thinly sliced
- 2 Thai chilies, minced
- 2 cups mixed vegetables (such as bell peppers, snap peas, carrots, and broccoli)
- 1 tablespoon oyster sauce
- 1 tablespoon soy sauce
- 1 teaspoon fish sauce
- 1 teaspoon sugar
- 1 cup fresh basil leaves
- Cooked jasmine rice, for serving
Instructions
- Heat the vegetable oil in a wok or large skillet over high heat.
- Add the minced garlic, sliced shallots, and minced Thai chilies. Stir-fry for 1-2 minutes until fragrant.
- Add the mixed vegetables to the wok and stir-fry for 3-4 minutes until they are tender-crisp.
- In a small bowl, mix together the oyster sauce, soy sauce, fish sauce, and sugar. Pour this sauce over the vegetables in the wok and toss to coat evenly.
- Add the fresh basil leaves to the wok and stir-fry for another 1-2 minutes until the basil is wilted.
- Remove the wok from the heat and serve the mixed vegetable Pad Krapow over cooked jasmine rice. Enjoy!
