  • 2 tablespoons of honey
  • 1 tablespoon of cornstarch
  • 1 teaspoon of sesame seeds
  • Cooked rice, for serving

Instructions

  • In a small bowl, whisk together 1/2 cup of orange juice, 2 tablespoons of soy sauce, 2 tablespoons of honey, and 1 tablespoon of cornstarch. Set aside.
  • Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat. Add the shrimp and stir-fry for 2-3 minutes, or until pink and opaque. Remove the shrimp from the skillet and set aside.
  • Add the remaining 1 tablespoon of vegetable oil to the skillet. Add the sliced red and yellow bell peppers, along with the snap peas. Stir-fry for 2-3 minutes, or until the vegetables are crisp-tender.
  • Add the minced garlic and grated ginger to the skillet, and stir-fry for an additional 1 minute.
  • Pour the orange juice mixture into the skillet, and bring to a simmer. Cook for 1-2 minutes, or until the sauce has thickened and the vegetables are coated.
  • Return the cooked shrimp to the skillet, and toss to coat in the orange glaze.
  • Sprinkle the stir-fry with 1 teaspoon of sesame seeds, and toss to combine.
