  • 1/2 teaspoon salt
  • 1 cup unsalted butter, softened
  • 4 large eggs
  • 1 cup whole milk
  • 1 tablespoon vanilla extract
  • Neon food coloring (pink, orange, yellow, green, blue, purple)
  • 3 cups powdered sugar
  • 1/2 cup unsalted butter, softened
  • 2 teaspoons vanilla extract
  • 3-4 tablespoons heavy cream

Instructions

  • Preheat the oven to 350°F. Grease and flour three 8-inch round cake pans.
  • In a large bowl, whisk together 3 cups of flour, 2 cups of sugar, 1 tablespoon of baking powder, and 1/2 teaspoon of salt.
  • Add 1 cup of softened butter, 4 eggs, 1 cup of milk, and 1 tablespoon of vanilla extract to the dry ingredients. Mix until smooth and well combined.
  • Divide the batter evenly into 6 separate bowls. Add a few drops of neon food coloring to each bowl to create pink, orange, yellow, green, blue, and purple batters.
  • Pour each colored batter into the prepared cake pans, creating layers of rainbow colors.
  • Bake for 20-25 minutes, or until a toothpick inserted into the center of the cakes comes out clean. Allow the cakes to cool in the pans for 10 minutes, then transfer to wire racks to cool completely.
  • In a medium bowl, beat 1/2 cup of softened butter until creamy. Gradually add 3 cups of powdered sugar, beating well after each addition. Stir in 2 teaspoons of vanilla extract and 3-4 tablespoons of heavy cream until the frosting reaches a spreadable consistency.
  • Place one cake layer on a serving plate and spread a layer of frosting on top. Repeat with the remaining layers, stacking them to create a rainbow cake. Use the remaining frosting to cover the top and sides of the cake.
  • Slice and serve the neon rainbow cake, and enjoy the vibrant and colorful dessert!
