  • In a small bowl, mix together the grated parmesan cheese, minced garlic, breadcrumbs, melted butter, and dried thyme to create the garlic parmesan crust.
  • Using a sharp knife, carefully slice a pocket into each chicken breast, being careful not to cut all the way through.
  • Season the inside of each chicken breast with salt and pepper.
  • Stuff each chicken breast with the sliced mushrooms and shredded Swiss cheese, dividing the filling evenly among the breasts.
  • Dip each stuffed chicken breast into the garlic parmesan crust mixture, coating both sides evenly.
  • Place the coated chicken breasts on a baking sheet lined with parchment paper.
  • Bake in the preheated oven for 25-30 minutes, or until the chicken is cooked through and the crust is golden brown.
  • Remove from the oven and let the chicken rest for 5 minutes before serving.
