  • Salt and pepper to taste

Instructions

  • In a large skillet, heat 1 tablespoon of olive oil over medium heat.
  • Add 1/2 thinly sliced onion and sauté until softened, about 3 minutes.
  • Add 8 ounces of sliced mushrooms to the skillet and cook until they release their liquid and become golden brown, about 5 minutes.
  • Season the mushrooms with salt and pepper to taste.
  • Slice 2 hoagie rolls in half and place 2 slices of provolone cheese on each bottom half.
  • Divide the sautéed mushrooms and onions evenly between the hoagie rolls.
  • Top with the remaining provolone cheese slices and place the top half of the hoagie rolls on top.
  • Wrap the hoagies in aluminum foil and place them in a preheated 350°F oven for 5 minutes, or until the cheese is melted and the hoagies are heated through.
  • Unwrap the hoagies and serve hot. Enjoy!
