  • Spread 1 tablespoon of tomato pesto on each slice of ciabatta bread.
  • Layer 4 slices of mozzarella cheese on 2 slices of bread, then top with avocado slices, and cover with the remaining 2 slices of bread.
  • Brush the top and bottom of the sandwiches with olive oil.
  • Place the sandwiches in the panini press or grill pan and cook for 3-4 minutes, or until the bread is golden and the cheese is melted.
  • Carefully remove the sandwiches from the press or pan, slice in half, and serve hot. Enjoy!
