Instructions

  • Preheat the oven to 325°F (163°C).
  • Place 20 Oreo cookies in a food processor and pulse until finely ground. Add melted butter and pulse until combined.
  • Press the Oreo mixture into the bottom of a 9-inch springform pan, creating an even crust. Place in the refrigerator to chill while preparing the filling.
  • In a large bowl, beat the cream cheese and sugar until smooth. Add vanilla extract, peppermint extract, and eggs one at a time, mixing well after each addition.
  • Stir in the sour cream and heavy cream until fully combined. Add a few drops of green food coloring if desired for a minty color.
  • Roughly chop the remaining 4 Oreo cookies and gently fold them into the cheesecake batter.
  • Pour the batter over the chilled Oreo crust and smooth the top with a spatula.
  • Place the springform pan on a baking sheet and bake in the preheated oven for 55-60 minutes, or until the edges are set and the center is slightly jiggly.
  • Turn off the oven and let the cheesecake cool in the oven with the door slightly ajar for 1 hour.
  • Remove the cheesecake from the oven and run a knife around the edges to loosen. Refrigerate for at least 4 hours, or overnight, to set.
  • Before serving, garnish with whipped cream and additional Oreo cookies. Enjoy!
