  • 1/2 cup of sliced black olives
  • 1/4 cup of crumbled feta cheese
  • 2 tablespoons of olive oil
  • 1 teaspoon of dried oregano
  • Salt and pepper to taste

Instructions

  • Preheat a panini press or a grill pan over medium heat.
  • Brush one side of each slice of ciabatta bread with olive oil.
  • Spread the non-oiled side of each slice with hummus.
  • Layer the sliced red bell pepper, yellow bell pepper, zucchini, red onion, black olives, and crumbled feta cheese on two of the slices.
  • Sprinkle the dried oregano, salt, and pepper over the vegetable and cheese layers.
  • Top with the remaining slices of ciabatta, oiled side facing out.
  • Place the sandwiches on the panini press or grill pan and cook for 3-4 minutes, or until the bread is golden and crispy, and the filling is heated through.
