  • In a large skillet, cook 1 lb of maple sausage over medium heat, breaking it apart with a spatula as it cooks, for about 8-10 minutes or until fully cooked.
  • While the sausage is cooking, crack 8 eggs into a bowl, add 1/4 cup of milk, and season with salt and pepper. Whisk until well combined.
  • Once the sausage is cooked, transfer it to a plate and cover to keep warm. Drain any excess grease from the skillet.
  • In the same skillet, melt 2 tbsp of butter over medium heat. Pour in the egg mixture and let it sit for a few seconds until the edges start to set.
  • Using a spatula, gently push the eggs from the edges towards the center, allowing the uncooked eggs to flow to the edges. Continue this process until the eggs are mostly set but still slightly runny.
  • Remove the skillet from the heat and continue to gently fold the eggs until they are fully cooked but still soft and fluffy.
  • Serve the scrambled eggs alongside the maple sausage and enjoy!
