Ingredients
- 1 and 3/4 cups all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1/4 teaspoon ground cloves
- 1/2 cup unsalted butter, melted
- 1 cup canned pumpkin puree
- 1/2 cup granulated sugar
- 1/4 cup brown sugar
- 1/4 cup maple syrup
- 2 large eggs
- 1 teaspoon vanilla extract
- 1/2 cup chopped pecans
- 1/4 cup all-purpose flour
- 1/4 cup brown sugar
- 2 tablespoons unsalted butter, melted
- 1/4 teaspoon ground cinnamon
- 1/4 cup powdered sugar
- 1 tablespoon maple syrup
- 1-2 tablespoons milk
Instructions
- Preheat the oven to 375°F (190°C). Line a 12-cup muffin tin with paper liners or grease with non-stick cooking spray.
- In a large bowl, whisk together 1 and 3/4 cups of flour, baking powder, baking soda, salt, cinnamon, nutmeg, and cloves.
- In a separate bowl, mix together melted butter, pumpkin puree, granulated sugar, brown sugar, maple syrup, eggs, and vanilla extract until smooth.
- Add the wet ingredients to the dry ingredients and stir until just combined. Do not overmix.
- In a small bowl, combine chopped pecans, 1/4 cup flour, 1/4 cup brown sugar, melted butter, and 1/4 teaspoon cinnamon to make the streusel topping.
- Divide the muffin batter evenly among the prepared muffin cups. Sprinkle the pecan streusel topping over the batter in each cup.
- Bake for 18-20 minutes, or until a toothpick inserted into the center of a muffin comes out clean. Allow the muffins to cool in the tin for 5 minutes, then transfer to a wire rack to cool completely.
- In a small bowl, whisk together powdered sugar, 1 tablespoon maple syrup, and 1-2 tablespoons of milk to make the maple glaze. Drizzle the glaze over the cooled muffins.
- Serve and enjoy!
