Ingredients
- 1 1/2 cups of coconut milk
- 1 1/2 cups of heavy cream
- 1/2 cup of sugar
- 2 teaspoons of gelatin
- 2 ripe mangoes, peeled and diced
- 1/4 cup of water
- 1/4 cup of sugar
Instructions
- In a small bowl, sprinkle 2 teaspoons of gelatin over 1/4 cup of cold water. Let it sit for 5 minutes to bloom.
- In a saucepan, combine 1 1/2 cups of coconut milk, 1 1/2 cups of heavy cream, and 1/2 cup of sugar. Heat over medium heat, stirring occasionally, until the mixture is hot but not boiling.
- Remove the saucepan from the heat and stir in the bloomed gelatin until completely dissolved.
- Pour the mixture into 6 ramekins or serving glasses. Let it cool to room temperature, then cover and refrigerate for at least 4 hours or until set.
- In a blender, puree the diced mangoes with 1/4 cup of sugar until smooth.
- Before serving, spoon the mango puree over the set panna cotta in the ramekins or glasses.
