Instructions

  • Place the diced potatoes in a large pot and cover with water. Bring to a boil and cook for 15-20 minutes, or until the potatoes are fork-tender. Drain and transfer to a large mixing bowl.
  • In the mixing bowl with the cooked potatoes, add 1/2 cup sour cream, 1/2 cup mayonnaise, 1/2 cup shredded cheddar cheese, 1/4 cup chopped green onions, 4 slices of crumbled bacon, 1 teaspoon garlic powder, 1/2 teaspoon salt, and 1/2 teaspoon black pepper. Mix until well combined.
  • Transfer the potato mixture to the prepared baking dish and spread it out evenly. Top with the remaining 1/2 cup of shredded cheddar cheese and 2 slices of crumbled bacon.
