Instructions

  • In a large mixing bowl, beat 1 cup of heavy cream and 1/2 cup of powdered sugar until stiff peaks form.
  • In another bowl, whisk together 8 ounces of mascarpone cheese, 1 teaspoon of vanilla extract, 1/2 cup of freshly squeezed lemon juice, and the zest of 2 lemons until smooth.
  • Gently fold the whipped cream into the mascarpone mixture until well combined. Set aside.
  • In a shallow dish, combine 1/4 cup of limoncello liqueur and 1/2 cup of strong brewed coffee.
  • Quickly dip each ladyfinger cookie into the coffee mixture and arrange them in the bottom of an 8x8 inch dish to form a single layer.
  • Spread half of the mascarpone mixture over the ladyfingers. Repeat with another layer of dipped ladyfingers and the remaining mascarpone mixture.
  • Cover and refrigerate the Lemon Tiramisu for at least 4 hours, or overnight, to allow the flavors to meld together.
  • Before serving, sprinkle 1 tablespoon of lemon zest over the top for garnish. Enjoy!
