  • 4 boneless, skinless chicken breasts
  • 2 lemons, juiced and zested
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 ripe mangoes, diced
  • 1/2 red onion, finely chopped
  • 1/4 cup fresh cilantro, chopped
  • 1 jalapeno, seeded and finely chopped
  • 1 lime, juiced
  • 1 tablespoon honey
  • Salt and pepper to taste

Instructions

  • In a small bowl, whisk together the juice and zest of 1 lemon, olive oil, minced garlic, oregano, thyme, salt, and pepper. Place the chicken breasts in a resealable plastic bag and pour the marinade over them. Seal the bag and massage the marinade into the chicken. Let it marinate in the refrigerator for at least 30 minutes.
  • While the chicken is marinating, prepare the mango salsa. In a medium bowl, combine the diced mangoes, red onion, cilantro, jalapeno, juice of 1 lemon, juice of 1 lime, and honey. Season with salt and pepper to taste. Mix well and refrigerate until ready to serve.
  • Heat a grill or grill pan over medium-high heat. Remove the chicken from the marinade and discard the excess marinade. Grill the chicken for 6-7 minutes on each side, or until cooked through and no longer pink in the center.
  • Transfer the grilled chicken to a serving platter and let it rest for a few minutes. Serve the lemon herb chicken with a generous spoonful of mango salsa on top. Enjoy!
